Fried Avocado Slices

Ohhhh yes, fried avocados, and they are absolutely delicious!! We made these as a side dish for the Quinoa Stuffed Peppers and it was a fantastic combo for a MRL dinner. ~Briana

Ok, so onto the ingredients!
2 Avocados
2 eggs (I use organic)
Splash of milk (regular, almond, soy, whatever you use!)
1/3 cup coconut flour
1 tsp garlic powder
salt and pepper to taste
Coconut oil
We served this with the accompanying dip and it was awesome:
2 tbsp dijon mustard
1 1/2 tbsp balsamic vinegar
1 tbsp organic mayo (or regular mayo)
1 tsp raw/organic honey
1/2 tsp minced garlic
Cut your avocados in half and remove the pit. Slice each half into 3 slices.
In a bowl, whisk the eggs and milk. In another bowl place the coconut flour, garlic powder and salt and/or pepper if you choose.
Dip the avocados and coat well in the egg, then place in the coconut mixture and coat well.
In a skillet, heat coconut oil. Once hot, place avocados in oil, turning when each side is browned.
Once the slices are appropriately browned, place on a plate with paper towels to drain.

Now mix up in a bowl all the ingredients for the dipping sauce. You're ready to dip your avocado slices in the honey-mustard sauce and enjoy!
