"Souper" Sunday can be "Souper" Easy!

If you have not picked up on our "Souper Sunday" idea yet, it's time to get on the soup train! Picking one day a week to serve a soup is great way to use up leftovers and it is even more simple when done in the crock pot!

The soup here has whole grain brown rice (made early in the week for meal sides and Mexican night), Great Northern beans, onion, a little garlic, and sea salt.
I used the leftover chicken broth (made from a small whole chicken) leftover whole grain brown rice (about a cup cooked) opened two cans of great northern beans, next tossed in diced onion and some minced garlic. Placed soup on low in the crock pot for about an hour or two. It warmed perfectly while I went to Church. Just before serving, I tossed the salad together with (pre-washed) organic romaine and spinach, hot peppers, avocado, sunflower seeds, grated carrot, and balsamic vinegar as dressing.
