Laura's Granola

Laura's Granola is my dear sweet mothers recipe. I remember her making this often while growing up. Its packed with protein and healthy nut fats and fiber! Great with almond milk, as a topping on yogurt or even as a dessert topping!
Recipe:
1 cup of Wheat germ
4 cups old fashioned oats (Gluten Free, Bobs Red Mill)
1 cup of Sunflower seeds
1/2 cup ground sesame seeds
1 1/2 cups shredded coconut (Bobs Red Mill or other Unsweetened organic)
1 cups chopped walnuts
1/2 cup bran
1/2 cup flax seeds (ground)
1 cup almonds
Mix all dry ingredients

Heat the following wet ingredients on stove top in small pan just for a few minutes, enough to melt all ingredients together - make sure not to boil!
1/2 cup coconut oil (or sub fresh organic "apple juice" from juicer! it is ~ 1 medium apple)
1/4 cup molasses or maple syrup
1/4 cup brown sugar (OPTIONAL)
Once the above is melted, remove from heat and add:
1 tablespoon of organic vanilla extract
Pour wet ingredients over dry mixture and stir.
Spread half the mixture on cookie sheet and bake at 350 degrees for 10 minutes then stir. Bake 5 more minutes. Repeat with remaining half of mixture. Let cool and store in an air tight container or freeze.
* This recipe turns out great even if you do not have all the different nut ingredients, simply use more oats and more of what nuts you do have on hand.
