White Chicken Chili

This white chicken chili recipe has been a staple in our household for as long as I can remember. It's delicious with homemade bread on cold, wintry evenings. I even made this for lunch when Sarah and her family came to visit before their big move--it was a hit!

I have always made this in my dutch oven, however I think you could easily throw this in the crockpot for an easy weeknight dinner! ~Briana

Ingredients:

3 cans white beans (great northern, cannellini, etc.), DO NOT DRAIN!

2 lbs. boneless, skinless organic chicken, cubed

1 med. sweet onion, diced

4 cloves garlic, minced

16 oz. frozen sweet corn (organic)

2 tsp. Cumin

1/2 tsp. Oregano

4 oz. can chopped green chilies

1 1/2 cups organic chicken broth

Juice of 1/2 lime (or 1 tsp prepared lime juice)

1/2 tsp. cayenne pepper

1 cup grated monterey jack cheese

1/2 cup chopped cilantro (optional)

Add cubed chicken to dutch oven and cook until no longer pink.

Remove chicken, then saute onion and garlic until golden. Add back chicken, and stir in beans with their liquid, corn, cumin, oregano, cayenne, chilies, and chicken broth. Simmer 30 min.

Add cheese and stir until well blended.

Just before serving, stir in lime and top bowls of soup with additional cheese and cilantro if desired. We usually eat this with a loaf of freshly made italian bread! Enjoy :)
