Garden Roma Tomato Soup

Would you believe we picked these tomatoes while they were still green due to snowfall in October? We let them ripen on the workbench in the basement and then froze them whole in a large freezer bag. We used a straw to remove any remaining air out of the bag.

We started with frozen whole roma tomatoes and chopped them into halves as pictured below.

Then we made a delicous garden vegetable soup! Simply reducing the tomatoes to a sauce and adding spices.

Simmer on low heat for an hour, uncovered. Once the tomatoes become soup consistency add your veggies and spices: onions, garlic, carrots, celery (or other veggies- even frozen veggies are good!) parsley, basil, or italian seasoning mixture. Allow to simmer another half hour to let the flavors settle in.

Serve with fresh bread! It was great with fresh baked Oatmeal Honey Bread!
