Adam's 5-Day Burritos

We used to be a household with a freezer full of frozen burritos. My husband ate them frequently for lunch. When we made the switch to cleaner eating, those were, of course, one of the first things to go. But he loved having burritos for lunch! So I challenged him to make his own freezer burritos and he took me up on it and came up with this awesome recipe!

He made up all his burritos on Sunday, wrapped them in tin foil, and took them all Monday morning and stored them in the freezer at work so he could grab them every day at lunch. He kept a jar of salsa in the fridge and a bottle of hot sauce at his desk ;) He was able to make 10 and they lasted him all week!

These would also be great to keep in your freezer for a quick dinner on busy weeknights! Enjoy this recipe from the DRL (Dad Reading Labels!) at my house! ~Briana

Ingredients:

1 can organic pinto beans

1 can organic black beans

4 oz. can diced green chiles

1 cup cooked organic jasmati rice, flavored with msg-free taco seasoning

1 lb. taco seasoned organic ground beef

1 block of monterey jack cheese, shredded

Burrito tortillas (organic if you can find them)

Salsa (optional--we buy organic if needed, but get most of ours from my mother-in-law who keeps us stocked up on homemade salsa!)

Hot sauce (optional)

Cook up your beef and rice, seasoning both with msg-free taco seasoning. Shred your cheese and open all other cans and drain beans. Mix all ingredients (except the cheese!) in a bowl.

Place all ingredients on a tortilla, top with cheese and hot sauce (again, this is optional) and wrap up tight!

Then wrap in tin foil and place in freezer until ready to eat!
