Chia Seed Crackers

This was my first attempt at making my own crackers, and I have to say it turned out pretty well! We love chia seeds in our house and this recipe was perfect because I had all the ingredients already!

To make these crackers, all you need are these ingredients:
2 eggs (organic)
2 Tbsp chia seeds
3 tbsp Coconut flour
2 tbsp Almond flour
Salt and pepper to taste
Combine all your ingredients until they form a ball.


Place the ball between two pieces of parchment paper and roll with a rolling pin until the dough is about ¼ inch thick.

Then use a small glass (I used a large shot glass that is about 1 ½ inches across) to cut out the crackers.

Place cracker cutouts on parchment paper on a baking sheet.

Bake at 350 for 12-15 minutes or until crispy.

I should mention that the thicker your crackers are, the chewier they will be. So if you want a crisp cracker, get them as thin as you can.
To go with these, I used an organic herb packet I had mixed with organic cream cheese as a tasty dip to spread on these yummy crackers. It was a perfect afternoon snack!
