Black Bean Cake Burgers

This is another staple dinner meal around our house. Sure, we love beef burgers, but these are the perfect substitute if you feel like going vegetarian, but still want a hearty meal. Enjoy! ~Briana
Ingredients:
2 Tbsp coconut oil
2 eggs (I use organic)
2-15 oz. cans black beans, drained
½ c. panko crumbs (or organic rough cut bread crumbs)
¼ cup chopped green onions
¾ tsp Cumin
½ tsp sea salt
½ tsp pepper
1 garlic clove, minced
Burger buns (we've started homemaking ours, but these are from the natural bread store in my area)



Mix all ingredients (EXCEPT your panko/bread crumbs) in a bowl. Form patties with the bean mixture.

In a separate bowl place your panko/bread crumbs. Coat the bean patties with crumbs.

Heat coconut oil in a pan, and cook until browned.

Serve on a bun with lettuce, tomato and Dijon-mayo (or any other sauce or toppings you prefer!)
