Crispy Sweet Potatoes

These crispy sweet potatoes make the perfect side dish for many meals! The kids love them too!

You will need:

Bag of sweet potatoes, peeled.

Coconut oil

Organic butter

*salt and pepper if desired

*Once you have peeled your sweet potatoes, you can either slice them or cut into chunks.

Then, there are two ways to cook these:

1. You can cook them in a cast iron skillet with a tbsp of coconut oil and a tbsp of butter. Cook until golden and crispy on the outside!

2. You can bake them. Place 1-2 tbsp EACH of butter and coconut oil on a baking pan. Heat oven to 450 degrees. Place pan in oven to melt oil and butter, then add sweet potatoes. Coat with oil/butter mixture and top with salt and pepper, or even seasoned salt!

After 10-15 min, or when they are starting to brown a bit, flip them and return to the oven for another 10-15 minutes or until golden and crispy. Enjoy! ~The Mamas
