Mason Jar Taco Salad

I really love a good mason jar meal. I can prep everything on sunday night, fill 5 jars, and have lunch ready to go for every day during the week. This is one of my favorites! ~Briana

You will need:

5-32oz. wide mouth mason jars with lids

Organic greens (your pick! Spring mix, baby romaine, baby spinach, kale, etc.)

Monterey Jack cheese, shredded

Organic chicken, shredded and seasoned with MSG-free taco seasoning

Frozen sweet corn

Black beans (organic)

Cherry tomatoes (organic)

Organic Salsa or dressing of your choosing

*First chop up your tomatoes, and shred your cheese. Drain the black beans and thaw your corn. Set aside.

*Cook your chicken and shred, mix in taco seasoning.

*Now it's time to layer! I prefer to put the wet stuff at the bottom so it doesn't make everything soggy. So I layer: tomatoes, beans, corn, chicken, cheese, and lettuce. Add the salsa or dressing when you eat it.

*Also, I should note, if you plan to take this to work and you fill your mason jar completely, you may want to bring a bowl to pour it out into. Otherwise, leave yourself a little space at the top so you can eat straight from the jar :) Briana
