Pumpkin Bread

So delicious to serve at holidays! This is my favorite bread at both Thanksgiving and Christmas. My Mom calls this "cake batter bread" as it is so moist and just as delicious as dessert! Enjoy! ~Sarah
Be warned, this recipe in its orginal form is NOT Low in Sugar, Mamas, but it is NON-Processed!
Recipe:
1 ½ cup sugar (Sub: ¾ cup honey or maple syrup ¾ cup apple juice or use the org. sugar)
1 2/3 cup flour
1 tsp cinnamon
1 tsp nutmeg
½ tsp cloves
¼ tsp baking powder (aluminum free)
1 tsp baking soda
½ cup coconut oil (melted to liquid form on stove top)
½ cup water
2 eggs
1 cup cooked and mashed sweet potatoes or squash.
Mix all ingredients, preheat oven to 325 degrees. Your mixture will look like this:

Place in greased and floured bread pans and bake for 40- 45 minutes. Delicious!
