Indian Madras Pie

This is a variation of a Shepherd's pie, but easy and so flavorful! You can use turkey or beef, and the fresh vegetables round out this tasty dish.
Ingredients:
1-2 lbs. organic yukon gold potatoes, cubed (basically if you want a thick layer of potato on the top, do the 2 lbs, and a thinner layer use 1 lb.)
1 lb. organic or grass-fed ground beef or turkey
1 1/2 cups organic carrots, peeled and sliced
2 large parsnips, peeled and sliced
2 tsp ground ginger
1 1/2 tsp salt (don't scrimp here, I did the first time I made this and I was sorry!)
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground cinnamon
1/2 tsp ground turmeric
1 cup frozen peas
2/3 cup milk
2 Tbsp butter
Paprika to shake over top before baking
*Wash and cube potatoes. Heat pot of water to boiling, salt your water, and add potatoes. Remove and drain potatoes once soft, add butter and milk, then mash. Add additional salt if needed. Set aside.
*Peel your carrots and parsnips, then cube.


*In a large skillet, cook and crumble your ground meat. Once it is nearly cooked, add in all spices, then vegetables. Cover and let cook over medium heat, stirring occasionally, for 10 minutes.

*Then transfer meat mix to a cooking dish, then top with mashed potatoes. Sprinkle with paprika.


*Bake, uncovered, in oven at 350 degrees for 20 minutes.

So let's be honest, Gordon Ramsey would scream in my face and call me a donkey if he saw how this meal is plated. But it's just one of those meals that slops in a mess on the plate no matter what you do. But it's tasty and your stomach won't care about presentation! :)
