Hummus Tuna Melts on Oatmeal Honey Bread

This meal is so easy! Perfect for a busy Mama on the go! If you have your hummus pre-made its even faster. I always have the ingredients on hand in my refrigerator or pantry so it makes lunch a breeze! Also, I pull a loaf of the Oatmeal Honey Bread out of the freezer that morning so its perfect to use by lunch.

Tuna (in water only!)
Dijon coarse mustard
Romain lettuce (Organic!)
Spinach (Organic!)
Garbonzo beans (or Chickpeas)
Basil

The Oatmeal Honey Bread was made prior to this lunch as well. It freezes exceptionally well! Having a few loaves in the freezer makes meal times much easier! Click here for the recipe.
Preheat oven to 350 degrees
Open 2 small cans of tuna or 1 large.
drain and put in bowl. Add about 1 tablespoon of dijon mustard and stir.
Slice bread about 3/4 inch thick
Top with a thick layer of hummus (I do 2 with the Dill and 2 with the Cajun)
Top with tuna
*grated mozzarella cheese is also an option for this tuna melt! I do not use cheese but it would be yummy.
Place on cookie sheet and top with spinach or basil (optional to use the basil)
Bake for about 10-15 minutes or until desired temperature.
Top with sliced tomato and a little more grated cheese (if using)
Let sit for a few minutes before serving.
This lunch is filling! You may only have room for one piece, but feel free to have two and NOT feel guilty because of this non-processed lunch! ~Sarah
