Banana Bread and Muffin Variation

Follow our banana muffin recipe for muffins below!

* For the mini's add dark chocolate chips just before baking! Add them once the batter is poured into the pan.

As for the Banana bread: it is "refined" sugar-free!!! It a great idea to use up bananas in banana bread and muffins!

Banana Bread

3 Bananas (Brown-spotted ones work best, they are sweeter and a great way to use up!)

3 Tablespoons of milk (I use unsweetened almond milk)

1/2 cup of honey (RAW if possible!)

1/2 cup apple juice (from juicer if possible, or AT LEAST high fructose corn syrup FREE~!!!)

1/2 cup organic vanilla yogurt

1/3 cup coconut oil, melted to liquid consistency (or olive oil if you must)

1 tsp organic vanilla extract

1/2 tsp baking soda

1 tsp aluminum free baking powder

1/4 tsp salt (optional)

2 Farm eggs

2 cups of unbleached (organic if you can!) flour

Optional for muffins: add 1-3 individual dark chocolate chips to each muffin once you have already poured the batter!

For Bread: Add 1/2- 1 cup of dark chocolate baking chips to bread batter before pouring into pan.

Mix and put in coconut or organic butter greased - and flour-sprinkled pans. Two 8X4 " pans

Bake @ 325 degrees for 40-45 minutes

Stick a table knife in the center to check and if it comes out clean, its done!
