Almond-flour Chocolate Chip Cookies

What's better than a warm, gooey chocolate chip cookie on a chilly winter's day? Even better, cookies made with minimal sugar and almond flour which is packed with all kinds of great things!
Have you ever cooked with almond flour? Until 3 months ago, I hadn't. A bag of Bob's red mill almond flour is expensive, about $8 a bag in my area, but I save it for special occasions such as this!
In just 1/4 cup of almond flour you have 5g of protein! It's also a good source of vitamin E, monounsaturated fats, folate and niacin. And cup for cup it has as much calcium as milk!
Eager to make these cookies yet? Let me tell you what you'll need:
3 cups Almond flour
1 tsp baking soda
1/2 tsp sea salt
2 eggs
1/4 cup coconut oil, melted
2 Tbsp Almond milk (or any milk will work)
1 tsp vanilla extract
4-5 Tbsp raw honey
1 cup dark chocolate chips




*First you will want to melt your coconut oil and add in the rest of your wet ingredients into a mixing bowl. It should look like this:

*Now start adding in your dry ingredients. As you can see, I had an assitant helping me with this batch :)

*Once your dry ingredients have been well mixed in, the final dough (minus your chocolate chips) will look like this:

*Now add in those dark chocolate chips, and get your cookies on a baking sheet! Each batch makes about 18 cookies. I just use a regular silverware spoon to drop them on the pan. Bake at 350 degrees for 15-18 minutes or until golden brown.

I really love that these cookies aren't too sweet, but still appeal to my kids. My son has to just look at sugar to get all wound up and start getting crazy, and I find he can eat one of these cookies and not get hyped up. After helping me make these, he even invited his sister to pull up a chair and enjoy a cookie fresh out of the oven with him :)
