Walnut-crusted Fish

This is my go-to fish recipe--it's delicious and packed with protein. But better yet, does not require dipping the fish in egg! Also, this fish ends up SO crispy, yet it is not fried. Even my 5 year old thinks it's "so tasty, Mom!" :) Briana

Ingredients:

24 oz. flaky white fish (We really like Tilapia. Cod or Snapper are good choices too)

1/2 cup chopped walnuts

1 cup roughly torn "grainy" bread

2 cloves garlic, minced (as always I love my organic tube garlic!)

1 tsp lemon juice

1 Tbsp dried parsley

1 Tbsp olive oil

1/2 tsp salt

1/4 tsp ground pepper

Dijon Mustard (or Stone-ground)

*Place your fish pieces on a baking pan. Coat with mustard.

*Combine all other ingredients in food processor: (DO NOT include the mustard--I did this by accident the first time I made this and it turns everything into mush)

*Pulse until it creates a rough crumb mixture. Do you like my 30 year old food processor? :)

*Press the walnut crumb mixture on top of the fish.

*Bake at 425 for 15 minutes or until golden and crispy.

*You can't forget a side dish! I like to serve green beans with this fish. You will need:

Organic green beans (I get the pre-snipped, ready-to-go ones in a bag!)

Avocado oil

Sea salt

Ground pepper

Organic Butter

Put 1 Tbsp butter and 1 Tbsp Avocado oil in a hot skillet. Once the butter is melted, add green beans and coat well. Then add salt and pepper to taste. Cook until tender but still crisp!

Now you're ready to plate this dinner!

I added some homemade garlic bread that I had in the freezer to round out this meal. It's so delicious and even filling enough that my husband doesn't need seconds! And that's saying something! ;) ~Briana
