Eggs, Bacon & Sweet Potato Hash

You are going to love this completely clean/organic breakfast! About once a month I get together with an old friend and whomever hosts, makes breakfast and mimosas. Nothing like a tasty breakfast, a bubbly drink and good friendship and conversation to start your day!
So this week I tried this new-to-me recipe. We both loved it, and there was enough of the hash leftover that I made it again at dinner (with a new round of eggs and bacon), and my family thought it was a hit!
You will need:
1 package Applegate bacon
1 1/2 cups chopped onion
1 tsp salt
3-4 cups sweet potatoes, cut into 1/2 inch cubes
2 tsp olive oil
Coconut Oil
organic Eggs
organic Butter
Optional: organic orange juice and champagne of your choice!






*First, peel and cube your sweet potatoes.

*Bring a large pot of water to a boil and add the sweet potatoes. Cook for 4 minutes. Drain and set aside.

*In a foil lined baking pan, place bacon in strips and put into oven at 410 degrees. Bake for approximately 10-15 minutes, checking often to make sure it doesn't overcook! Once cooked, place on a plate with paper towels to drain.


*In a skillet, add 1 tbsp coconut oil and 2 tbsp butter. Once melted, add onion and cook until soft. Add sweet potatoes.
*Sprinkle onion and sweet potatoes with salt and pepper. Add more oil and butter as needed, cooking approx. 8 minutes or until browned.

*In another skillet, put 1 tbsp butter and cook your eggs however you prefer--I like mine overhard, my husband likes them overeasy. Your pick!
*On a place place the sweet potato hash with the egg over top. Place bacon on the side.
*And of course, if you choose to accompany this dish with a delicious mimosa, pour those now as well! Cheers! ~Briana
