Banana Muffins

This recipe is Sarah's, but since I made them this week and documented with photos, she gave the go ahead for me to write up the recipe!

These fluffy and delicious muffins are a favorite of our kids, and I'll be honest, whenever I make them I usually end up eating 2 or 3!

You will need the following ingredients:

2 mashed bananas

1/4 cup Coconut oil (organic)

1/4 cup unsweetened applesauce

1/2 cup raw honey

1/2 tsp salt

1 tsp baking soda

1 tsp baking powder

1 tsp organic Vanilla extract

2 eggs, beaten

1/2 cup plain greek yogurt (organic)

2 cups All-purpose flour (organic)

(I also throw in a tsp of cinnamon sometimes!)

(I realize this is not a real photo, I ripped my bag so I just used this instead!)

*Mash the bananas and mix all wet ingredients. Kids are excellent at stirring, although be prepared to reward them with a hot muffin fresh out of the oven for their efforts! :)

*Add in dry ingredients, stirring as you go.

*Place muffin cups in a muffin tin and fill 3/4 full.

*Bake at 350 degrees for 15 minutes or until lightly browned.
