Oven Potatoes

This is one of those recipes that isn't trying to be super healthy, but one that we are making "better". By using organic coconut oil, butter, and organic baby gold potatoes, we are improving the ingredients over conventional freezer fries you get at the grocery store. In fact, this is the ingredients list for a bag of Ore Ida french fries: POTATOES, VEGETABLE OIL (SUNFLOWER, COTTONSEED, SOYBEAN, AND/OR CANOLA), SALT, DEXTROSE, DISODIUM DIHYDROGEN PYROPHOSPHATE, ANNATTO (VEGETABLE COLOR).

So what's better? Our homemade 4 ingredient oven fries, or the chemical mess above?

These oven potatoes go with just about anything and are easy to make.

Ingredients:

1 bag baby gold organic potatoes

organic Coconut Oil (for med-high heat)

organic Unsalted Butter

Seasoned salt

Turn on oven to 450 degrees. Place 2-3 tbsp. butter and 1 tbsp. oil onto a cooking sheet. Place in oven just long enough to melt.

After washing potatoes, cut into cubes, fries, little chunks, big chunks....seriously whatever you want! Remove pan with melted butter/oil and place potatoes on it. Coat potatoes in butter/oil, then sprinkle with seasoned salt.

Place in oven. After 20 minutes, take pan out and flip potatoes. Add more seasoned salt if you want (I usually do! But just a bit!). Put back in oven for another 20-25 minutes or until crispy and browned! YUM, this is a favorite treat of ours :)
